Vanilla & Honey Marshmallows

I used to absolutely despise store-bought marshmallows as a child. Now that I know how to make them with nutritious ingredients, I see them as a fun way to add in a sweet serve of gelatin to my hot drinks.

A batch like this makes approx. 16-20 marshmallows. Trust me, you’ll never want to buy pre-packaged, artificial ones again!

Ingredients:

  • 3 tbsp grass-fed, flavourless gelatin powder

  • 1 cup of filtered or spring water

  • A pinch of salt 

  • 1 tsp vanilla essence

  • About 1/2 cup raw honey (or maple syrup, just add as much as you want depending on how sweet you like it) 

Directions:

  1. Combine all the ingredients in a pan on the stove on a low heat. Whisk them together until everything has melted & formed into a gorgeous goldeny syrup. 

  2. Pour the mixture in a bowl and let it cool down to about room temp. Don’t let it cool for too long though as the gelatin can start to set! 

  3. In a stand mixer or with electric beaters, beat the marshmallow mix til it turns white and thick. This should take about 5 minutes or so! 

  4. Line a square oven dish with baking paper and pour the marshmallow mixture in. 

  5. Set it in the fridge (or in the freezer for a shorter amount of time if you’re impatient like me). 

  6. Cut them into squares, whatever size you prefer and store in an air tight container in the fridge for several days.

Notes: 

  • You can of course enjoy the marshmallows by themselves, but they are wonderful in a hot drink like a cacao. It gets all melty and sweetens the drink. 

  • They will only last a few days in the fridge, so I highly recommend freezing them. They still maintain their fluffy texture and last forever this way!

  • If you are using maple syrup, I find it can be a bit sweeter than honey, so adjust to suit your sweet tooth.
